This yummy GFDF apple rhubarb crisp was the perfect blend of fall and spring. I used the apples from our tree and the remaining rhubarb from our garden. This recipe is gluten free and dairy free for those of you who are sensitive as we are. I can’t even tell the difference and serve it to my friends all the time and they can’t tell it’s GF! If you don’t happen to have rhubarb around, just leave it out.
This makes a yummy breakfast or satisfying treat for your sweet tooth.
Here’s what you’ll need
3 1/2 cups apples cored and sliced (I didn’t peel mine)
1/2 cup rhubarb
1 tsp. cornstarch
1 T. water
1 tsp. lemon juice
2 tsp. each cinnamon (divided)
1/2 cup gluten free flour blend
1/2 cup gluten free oats
1/4 cup packed brown sugar
1/4 tsp. salt
2 T. DF butter (such as Earth Balance), softened
